Grilled Butterflied Chicken

If you have never butterflied a chicken before, you are really missing out. I had heard of it before in passing, but had never seen a full fledged recipe until I got the cookbook Cooking Thin. In it, there is a recipe for a simple roasted butterflied chicken that cooks for 1 hour at 500F. You prepare it the night before with salt and pepper and just leave it in the fridge, uncovered, until it's time to cook. There is no real need for a rotisserie after having chicken prepared this way. For Father's Day, we butterflied and grilled 2 chickens and noone in my family left my house hungry. You can season it anyway you like - tonight I did salt, pepper, paprika and garlic powder. It's a simple dinner that calls for a salad and corn or potatoes on the side and it is more satisfying - to me, anyway - than a big steak dinner.
