Simple Shabbat Dinner

This past Shabbat, I made a very simple dinner - chicken and kugel - but I made up for it with lots of flavor. For the kugel, I started with the Potato Zucchini kugel recipe from Spice and Spirit, but totally modifed it to be more like a regular potato kugel. Turns out that the "zucchini" that my mom brought over was actually a mexican squash, but it worked out really nicely in the kugel. Here's the recipe I created (and, thankfully, wrote down):

5 medium potatoes (I thought it was 6, but later found 1 on the floor!) - pureed in food processor, this is a "no shredded kugel" household
1/2 of a HUGE squash/zucchini - pureed
1 onion - pureed
4 eggs
1/3 c. bread crumbs or flour (I had some flavored bread crumbs and it came out to half of those and 1/2 flour to make up the 1/3 c.)
1 1/2 tsp. salt
1/4 tsp. black pepper

350F for 1 - 1 1/2 hours. Enjoy! and stick some in the freezer for another time like I did :)

I was out of pots (literally), so I did a simple roasted chicken that I could keep in the oven with the kugel. I took a few tablespoons of orange marmalade, a few "whatevers" of my favorite mango bbq sauce and some dried rosemary. It was yummy ;)

(I wish I enjoyed cooking as much as you do though. I used to -- but now my family are picky eaters and usually won't eat the more exotic, ethinically diverse mostly vegetarian food I want to make.
