A Different Mac and Cheese

While I was spending quality time with Macie a couple of weeks ago, I spent alot of time thinking of ways to control the amount of dishes being used without giving up home-cooked meals. I decided that Sundays need to be about prepping meals for the week and cleaning up most of the pots so that the week can run more smoothly. So, the day after we got home, I made a pan of macaroni and cheese and we ate from it the whole week. Danny took it for lunches, I had it for lunch, my parents had it for dinner when they watched the kids and it was gone by the end of the week. I didnt have the sharp cheddar that I usually use for mac and cheese, so I found this recipe that used different cheeses. I followed the recipe, but not much. Here's what I did:

cooked 1 lb of medium shells
used dry non-fat milk to make the 2 cups of milk (we were out of milk!) and added 3 tbsp of flour
added 1 cup of skim Mexican Blend cheese, 1/2 c. of skim Colby Jack, and 1/2 c. of parmesan
added 1/2 tsp pepper, 1/2 tsp salt, 1 tsp paprika and 1 tsp parsley and made sure everything was combined
topped it with 1/2 c. or so seasoned breadcrumbs, 1/4 c. of parm and baked it at 350F until golden.
