Whole Wheat Pasta and Chicken

On Friday, we had grilled chicken drumsticks for dinner and I had Danny grill the thighs also, either to freeze or have over the weekend. Turns out, there was nothing left to freeze after we had chicken topped salads for lunch and chicken and potatoes for dinner on Saturday and this healthy and delicious meal for dinner tonight. And, no, I am not even chickened-out…and I am thrilled that Danny actually ate whole wheat pasta and enjoyed it :)

BBQ rub on the drumsticks:
1 tsp each, black pepper, thyme, paprika, chili powder, celery seed
2 tsp salt
1/2 tsp each ground mustard, cumin
1 tbsp brown sugar (or to taste)

Southwest marinade on thighs:
1/2 c. OJ
3 tbsp olive oil
2 tbsp red wine vinegar (I used apple cider)
1 tbsp minced garlic
2 tsp chili powder
1 1/2 tsp dried oregano
1 tsp salt
1/2 tsp each, pepper, cinnamon
